How it started
Taco Republic began with a hand-me-down griddle, a family salsa recipe, and a simple goal: bring fresh, flavorful Mexican street food to the neighborhoods that don't have it. What started as weekend pop-ups turned into a full-time truck with a loyal following that tracks us across town.
We still do it the same way — marinate overnight, chop by hand, grill to order, and serve it hot with lime and a smile.
